Ingredients

  • 2 Pounds Fingerling Potatoes, Scrubbed And Dried

  • 1 Teaspoon Kosher Salt, Or To Taste

Instructions

1.     Preheat Your Oven To 425°F

2.     In A Small Saucepan, Gently Warm The Duck Fat Until It’s Just Melted.

3.     This Will Make It Easier To Evenly Coat The Potatoes.

4.     If Your Fingerling Potatoes Are Large, Slice Them In Half Lengthwise. Smaller Potatoes Can Be Roasted Whole.

5.     Pat Them Dry With A Paper Towel To Remove Excess Moisture.

6.     Place The Potatoes In A Large Bowl.

7.     Add The Melted Duck Fat, Salt, Pepper, And Herbs (You Can Tuck Whole Herb Sprigs Among The Potatoes, Or Strip The Leaves And Toss Them In).

8.     Gently Stir Or Toss To Evenly Coat All The Potatoes.

9.     Spread The Potatoes In A Single Layer On A Rimmed Baking Sheet Or In A Roasting Pan.

10.  If Using Smashed Garlic Cloves, Scatter Them On The Pan As Well. This Infuses The Potatoes With A Subtle, Savory Aroma.

11.  Roast In The Preheated Oven For 20–25 Minutes, Then Use A Spatula To Turn Or Flip The Potatoes So They Cook Evenly.

12.  Continue Roasting For Another 10–15 Minutes, Or Until The Potatoes Are Golden Brown And Easily Pierced With A Fork (About 30–40 Minutes Total).

13.  Remove The Pan From The Oven.
